Breakfast sandwiches don't have to be boring. There are plenty of ideas for elevating them, and it's a shame to limit yourself to cheese and tomatoes. Homemade sandwich spreads are a great solution. Instead of the typical egg spread, I opt for an entirely different recipe.

The selection of ready-made sandwich spreads is considerable, but when you turn the package over and look at the ingredients, it doesn't always look appealing. Meanwhile, making a tasty, homemade sandwich spread is neither complicated nor time-consuming. In my home, the walnut and sundried tomato spread is a big hit, disappearing quickly, and I need to make it again soon.

Walnut and sundried tomato sandwich spread

It's perfect for a quick and healthy breakfast, a snack, or as an addition to sandwiches. The preparation is simple, but it's worth making it a day before allowing the flavors to meld. It's tasty and vegan, so any lover of delicious food will enjoy it.

The combination of sundried tomato sweetness, soy sauce saltiness, and lemon juice tang creates an unparalleled umami flavor in this spread. Walnuts add a creamy texture and rich aroma, while fresh chives provide a pleasant freshness. If you like spicy flavors, you can add a bit of chili or cayenne pepper to the spread.

Ingredients:

                                  
  • 1 ½ cups of walnuts
  • 4 sundried tomatoes in oil or olive oil
  • 1 tablespoon of tomato paste
  • 1 small shallot, finely chopped
  • 1 tablespoon of soy sauce 
  • 1 tablespoon of lemon juice
  • 2 tablespoons of chopped chives
  • Salt and pepper to taste

Instructions:

  1. Combine the finely chopped walnuts in a blender with the drained sundried tomatoes, tomato paste, chopped shallot, soy sauce, and freshly squeezed lemon juice.
  2. Blend the ingredients until you achieve a smooth, uniform spread.
  3. Transfer the mixture to a bowl and add the chopped chives.
  4. Season to taste with salt and pepper, and mix thoroughly.

Store the prepared spread in an airtight container in the fridge. For an even more intense flavor, let it sit overnight before serving. Serve on your favorite bread, spread on tortillas, or use as a dip for sliced vegetables. Enjoy!
