This will make creating the spread for sandwiches very easy and very quick. It's also an excellent way to sneak an extra serving of vegetables into your diet. The sandwich spread is lighter than the classic salad—there is no mayonnaise here, and cottage cheese is the binder. This makes it healthy, tasty, and nutritious.
It goes perfectly with fresh rolls or bread. You can spread it on toast, although I know fans of this delicacy who can't resist eating it straight from the bowl. When I take sandwiches with vegetable spread to work, all my coworkers are envious. The recipe quickly gained recognition and even ousted the much more popular egg spread or cottage cheese with radish.
Ingredients:
- 3 hard-boiled eggs
- 10 oz vegetable mix
- 8 oz cottage cheese
- ⅓ teaspoon pepper
- 1 teaspoon salt
Preparation Method:
Step 1: Grate the hard-boiled eggs on a coarse grater.
Step 2: Transfer the vegetable mix to a large plate or bowl. Add the drained cottage cheese and the previously grated eggs. Season with salt and pepper.
Step 3: Use a potato masher to mash the mixture into a paste. The consistency should be quite smooth but not uniform, so a masher or fork will work much better than a blender.
Step 4: Cut the bread into slices, preferably not too thin. Spread the prepared vegetable spread on the slices. You can additionally sprinkle the sandwich with a green accent such as parsley or chives. Enjoy your meal!
