Savoury surprise: Cheese and mushroom fritters for dinner delight

When I made these fritters for dinner for the first time, my family was skeptical. The sweet version with apples, usually served for breakfast or as an afternoon snack, disappears quickly. But for dinner, savory meals are typically expected. This recipe proved to be a delightful surprise because the yeast batter cleverly conceals cheese and mushrooms.

Mushroom fritters

Savory fritters can be just as tempting, if not more, than their apple and sugar-laden counterparts. The preparation is simple, with the only challenge being the wait as the yeast dough rises. After a quick frying session, you'll find the plate empty in no time.

These savory fritters are versatile, perfect for dinner, supper, or even a party. The fluffy yeast dough hides mushrooms and cheese. You can enjoy them on their own, topped with a dollop of sour cream, mushroom, or tomato sauce, or serve them as a side with soups or salads.

Ingredients:

                            
  • 2.5 cups of all-purpose flour
  • About half a cup of milk
  • A pinch of sugar
  • 2 eggs
  • 4-5 tablespoons of oil
  • 25 grams (about 1 oz) of fresh yeast
  • 1 teaspoon of salt
  • 1 tablespoon of dried marjoram
  • Half a teaspoon of herb pepper
  • 250 grams (about 9 oz) of mushrooms
  • 1 onion
  • 100 grams (about 3.5 oz) of grated cheese
  • Oil for frying

Preparation method:

                          
  1. Slice the mushrooms and sauté them with the chopped onion in a bit of oil until they brown and all the water evaporates.
  2. Set aside to cool.
  3. Crumble the yeast and add warm milk, two tablespoons of all-purpose flour, and sugar. Mix thoroughly.
  4. Let the starter sit for 10-15 minutes until the yeast doubles in size.
  5. Sift the remaining flour into a bowl. Add salt, pepper, marjoram, cooled mushrooms, and grated cheese. Mix together.
  6. Add the eggs to the risen starter, mix, and combine with the other ingredients.
  7. Mix until the flour is absorbed.
  8. Drizzle the mixture with oil, knead briefly, and cover with a clean cloth. Let rise for 40 minutes.
  9. Heat oil in a pan.
  10. Grease a spoon with oil and use it to scoop portions of the mixture onto the pan.
  11. Fry for about 2-3 minutes on each side until the fritters are golden brown. Use a toothpick to check if they're cooked through.
  12. Place the fried fritters on a paper towel to absorb excess oil.
