You peek into the breadbox, hoping to find a piece of bread, only to see crumbs. Before you start cursing your luck and nervously searching for your shoes and car keys, check out this recipe for quick bread that doesn’t require rising.

Baking bread is often seen as a time-consuming and patient endeavor. Many people also think it requires significant skill and a good starter. But the world of baking offers many tasty recipes that even an amateur can handle. One of them is a simple bread without flour, yeast, or starter. Its base is yogurt and seeds. It’s perfect for when you run out of bread at home and don’t have the time or desire to rush to the bakery.

Quick bread without starter and yeast

This is the simplest homemade bread recipe I know. Just combine natural yogurt with oats, your favorite seeds, a little honey, and baking soda. It’s great as a base for classic sandwiches or as a side with soup. Most importantly, you don’t have to wait for it to rise—start baking right away.

Each bite is packed with flavor and nutrition because the base is a variety of seeds and nuts. You can customize the mix of ingredients and proportions to your liking. It’s healthy, quick, and truly delicious. Oats, seeds, and nuts provide fiber, vitamins, minerals, and healthy fats. Natural yogurt is a source of protein and probiotics that benefit the digestive system. When I take this bread out of the oven, everyone waits impatiently for it to cool down.

You can use either natural or Greek yogurt. Greek yogurt will give the bread a denser consistency. Bake the bread in a loaf pan with dimensions of about 8x3.5 inches.

Ingredients:

  • 18 oz natural yogurt,
  • 10.5 oz oats,
  • 1 cup mixed seeds and nuts (e.g., pumpkin, sunflower, walnuts, chia, flax),
  • 1 teaspoon honey,
  • 1/2 teaspoon salt,
  • 1 teaspoon baking soda.

Preparation:

  1. In a large bowl, combine yogurt, oats, seeds and nuts mix, honey, salt, and baking soda. Mix thoroughly until all ingredients are combined.
  2. Transfer the mixture to a loaf pan lined with parchment paper. Smooth the surface, pressing gently.
  3. Bake in a preheated oven at 340°F for about 50 minutes.

After baking, remove the bread from the pan and let it cool on a rack. Then slice and serve. Enjoy!
