Recipe for cheese cookies with sugar

Ingredients (for about 30 pieces):

            
  • 9 oz of full-fat or semi-fat farmer cheese (preferably minced)
  • 9 oz of butter
  • 9 oz of all-purpose flour
  • A pinch of salt
  • Granulated sugar for coating

Preparation:

        
  1. Quickly knead the farmer cheese, butter, and flour together into a uniform mass, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. After chilling, roll out the dough to a thickness of about 0.2 inches, cut out circles with a glass, fold each in half, coat in sugar, fold again, and press down.
  3. Place the cookies on a baking sheet lined with parchment paper and bake at 350 degrees Fahrenheit for 20–25 minutes, until golden and crispy.
