Winter wellness: Garlic soup recipe with 40 cloves

When the temperature outside drops and the thermometer mercilessly indicates that spring is still a ways off, warming soups come to the rescue. Instead of cooking chicken broth again, I serve a delicious garlic soup.

When winter takes its toll, many people struggle not only with cold hands but also with colds. One home remedy for winter woes is garlic. In this soup recipe, I use up to 40 cloves. However, there's no need to worry about it being too sharp.

Garlic soup with 40 cloves of garlic

Using 40 cloves of garlic may sound surprising, but this amount gives the soup its unique character. Roasted and blended garlic loses its sharp taste, becoming mild and creamy.

Roasting garlic brings natural sweetness and mows the sharp, biting taste. This makes the soup delicate and pleasant in flavor while retaining the intense aroma of garlic.

Besides garlic, the soup also features potatoes, onion, vegetable broth, and aromatic spices such as thyme, salt, and pepper. Lemon juice adds freshness and lightness to the soup. This garlic soup is a real treat for the palate and a boost for the immune system.

Ingredients:

                  
  • 40 cloves of garlic
  • 4 potatoes
  • 1 onion
  • 1/4 cup olive oil
  • Approximately 4 1/4 cups vegetable broth
  • Juice from half a lemon
  • 1 tablespoon fresh thyme
  • Seasonings: salt and pepper

Instructions:

        
  1. Peel the garlic and set aside 30 cloves to roast in olive oil for 20 minutes in the oven.
  2. Chop the potatoes and onion, then cook them with the remaining garlic in a pot along with the broth, thyme, salt, and pepper for another 20 minutes.
  3. After adding the roasted garlic, blend everything into a cream and add the lemon juice.

The creamy garlic soup can be served on its own, as it is very filling. It can also be enjoyed with croutons, crispy bread, or even slices of fried bacon. There is something delicious for everyone!
