  • 1 eggplant (aubergine)
  • 9 oz penne pasta
  • 2 cloves of garlic
  • 1 can of chopped tomatoes
  • 2 oz Parmesan
  • Fresh basil
  • Olive oil
  • Salt to taste
  • Pepper to taste

  3. Finally, add the cooked pasta to the sauce, mix well, sprinkle with freshly grated Parmesan, and garnish with basil leaves.
