Syrniki surprise: Turn cottage cheese into breakfast bliss
Over the weekend, I was planning to bake a cheesecake. It's my friends' favorite dessert, and they had asked me to make it. Unfortunately, they canceled our gathering. This happens often during flu season. So, I was left with blocks of cottage cheese and came up with the idea to use them creatively.
Although cottage cheese in blocks has quite a long shelf life, it's better to decide right away what to make with it, especially when you purchase a larger quantity. I had as many as four blocks needed for a cheesecake. I used one of them to bake syrniki.
Simple recipe, delicious taste
Syrniki is a traditional dish from Eastern cuisine that originates from Ukraine. These small, fluffy pancakes are primarily made from cottage cheese. The recipe and preparation of this dish are simple. Syrniki are healthier than classic pancakes because they contain plenty of protein and calcium, thanks to the cottage cheese. There's no need to add baking powder or baking soda to the cheese batter.
It's worth adding cinnamon
The recipe for syrniki requires just a few ingredients: cottage cheese, eggs, flour, and sugar, which is optional. The preparation method can slightly vary. Some recipes suggest crushing the cottage cheese before adding eggs. In my opinion, the pancakes are fluffier when you mix the yolks and flour into the cottage cheese and then incorporate whipped egg whites. Instead of sugar, you can add vanilla sugar. I also really enjoy adding a touch of cinnamon.
They come out perfect on a dry pan
Regardless of the method you choose, preparing the batter is very simple. The main focus should be on frying. Syrniki are fried on a dry, medium-heated pan, always covered. This method ensures they cook properly. The cheese batter becomes fluffy, and the surface turns beautifully golden and crispy.
If you're concerned about frying on a dry pan, add some butter, but it's unnecessary. Syrniki is traditionally served with sour cream and preserves. They also pair wonderfully with fresh fruit, honey, or maple syrup. This makes for a fantastic dish to start the day—ideal for a relaxed weekend breakfast. Even fans of classic cheesecake will enjoy these pancakes.
Syrniki for breakfast
Ingredients:
- 9 oz (250 g) cottage cheese,
- 3 eggs,
- 3 tablespoons of flour,
- powdered sugar to taste (optional),
- vanilla sugar (optional),
- a pinch of cinnamon to taste.
Preparation method:
- Separate the eggs into yolks and whites. Whip the whites into stiff peaks.
- Add the yolks and sugar to the cottage cheese, mashing with a fork.
- Then, add flour to the mixture and mix everything.
- Fold in the egg whites gently.
- Heat the pan and place portions of the batter, forming pancakes.
- Reduce the heat and fry the pancakes for several minutes until they are golden and can be flipped.
- Fry for another few minutes after flipping.
- Serve the ready syrniki with your favorite toppings.
