Sweet Potato Cake
Ingredients:
- 2 cups grated sweet potatoes
- 4 eggs
- Half a cup of sugar, preferably brown
- 1 cup oil
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Cinnamon to taste
- Cardamom to taste, optional
- Cranberries to taste, optional
- Your favorite nuts to taste, optional
Method:
- Mix the eggs with sugar into a fluffy mass using a mixer. Slowly add the oil while continuing to mix.
