A pancake roll is a great idea for a dessert that can substitute many cakes. Inside the pink pancakes is a well-known and loved combination: strawberries and whipped cream. This dessert is the quintessence of summer in a simple and delicious version.

This dessert is full of sweet, summer indulgence. In my home, it replaces cake and takes center stage at family afternoon tea. The pink color of the pancakes is due to food coloring. You can skip this step if you don't have it at home. However, it's sometimes worth coloring your day a little.
When the strawberry season ends, I substitute raspberries or currants instead. This combination is worth the sweet sin. It's simple and delicious—a great alternative to classic pancakes.
Ingredients:
Pancake batter:
- 2 eggs
- 4 tablespoons of sugar
- 1 vanilla sugar
- 1 cup of all-purpose flour
- 1.5 cups of milk
- Pink food coloring
Extras:
- 1 package of whipped cream powder
- 7 fluid ounces of cold milk
- Strawberries
Preparation method:
Step 1: Put the all-purpose flour into a bowl, add regular sugar and vanilla sugar. Pour in the milk and start mixing, adding eggs and food coloring in the meantime. Fry the pancakes in a heated pan.
Step 2: Whip the whipped cream powder with cold milk. You can also use heavy cream and powdered sugar, stabilizing its consistency with whipping cream stabilizer.
Step 3: Arrange the pancakes so that their edges overlap each other. Spread the whipped cream and add chopped strawberries. Roll it up.
Step 4: Decorate the finished roll with whipped cream and strawberries. Enjoy!
