Moroccan-style carrots

When I make this salad, the aroma of fragrant spices fills the entire house. These spices set the perfect tone for this appetizer. As expected from Oriental cuisine, you need to include essential spices like garam masala, garlic, paprika, and coriander.

Sugar adds a subtle sweetness to the dish, which pairs well with the bold spices. It's not overly sweet because the garam masala and sour citrus juice balance it out well.

This recipe makes an excellent side dish that will impress your loved ones. Even those who usually associate carrots with rabbits will appreciate it, and the elders in the family will enjoy this combination, too.

Ingredients:

  • 4 carrots
  • 2 cloves of garlic
  • Sweet and hot paprika
  • Half a teaspoon of garam masala
  • Half a teaspoon of sugar
  • Juice of 1 lemon or orange
  • Chopped coriander or parsley
  • Salt and pepper
  • Oil

Preparation Method:

  1. Peel the carrots and cut them into cubes or not-too-thin slices.
  2. Sauté them in a pan with some oil and a little water until soft.
  3. Add the pressed garlic, sweet and hot paprika (amount to personal preference), garam masala, sugar, citrus juice, and chopped parsley or coriander to the softened carrots.
  4. Season with salt and pepper to taste.
  5. Mix everything thoroughly and sauté for a while to blend the flavors.

Serve warm as a standalone dish or as a side dish with other meals. It's so tasty that it's hard to resist snacking straight from the bowl. It pairs perfectly with stewed and grilled meats, vegetable patties, or as a quick dinner snack. Enjoy!
