Carrot pancakes: A savory twist to quick dinners with garlic and cheese

Carrot Pancakes
Whenever I need a quick dinner option, I turn to this recipe. On hectic days, my family looks forward to carrot pancakes with great anticipation. They're an excellent way to use extra carrots and add more vegetables to your meals.

Ingredients:
- 12.3 oz of carrots before peeling,
- 1-2 cloves of garlic,
- 2 eggs,
- 3 heaping tablespoons of wheat flour,
- 1 tablespoon of breadcrumbs,
- 3 tablespoons of grated yellow cheese,
- salt, pepper, and a pinch of turmeric,
- oil for frying.
How to prepare:
- Peel and grate the carrots using large or medium holes of a grater.
- Add the eggs, flour, pressed garlic, breadcrumbs, grated cheese, and seasonings to the grated carrots. Mix well.
- Heat oil in a frying pan. Spoon the batter into the pan and fry both sides until the pancakes are golden brown.
- Place the fried pancakes on a paper towel to drain any excess oil. This helps make them lighter.
