Savory manor croquettes: A quick treat made with leftovers

There's always time for delicious croquettes, so there's no need to limit them to holidays. Especially since they can be made in a flash, making them perfect for busy workdays. Simply fry some crepes, and use leftover meat from the previous day for the filling. Manor croquettes are a dish the whole family will love.

There will be time for croquettes with cabbage and mushrooms later, as the mushroom-picking season is just getting started. However, this doesn't mean you have to wait for savory crepes. A delicious meat and vegetable filling works just as well, especially when you use leftover meat from dinner. This way, nothing goes to waste, and the whole family can enjoy unbelievably tasty croquettes.

Manor croquettes

These croquettes are crispy and delicious; their preparation is a piece of cake. They differ from classic meat croquettes in that the mixture can also include zucchini or onions. For the filling, you can use leftover meat from the previous day's dinner, such as roasted filet or pork neck.

To enhance the flavor of the filling even more, you can add grated cheese or a handful of chopped herbs. Red bell pepper also works well—this recipe is a great way to clean out the fridge of leftover vegetables.

When preparing the crepes, remember not to add sugar to the mixture. You can immediately fry a larger batch, using some for the croquettes and reserving the rest for sweet servings.

Ingredients:

  • 6 crepes
  • Additional crepe batter for breading
  • 1 cup of breadcrumbs

Filling:

  • Cooked, roasted, or grilled meat
  • 1 onion
  • 1 clove of garlic
  • 1 small zucchini
  • 1 tablespoon of butter
  • Salt and pepper to taste
  • Spices: sweet and hot paprika, nutmeg, oregano

Additionally:

  • Oil for frying
  • Garlic sauce for drizzling

Preparation:

  1. Chop or grind the meat.
  2. Dice the onion and zucchini, and peel and crush the garlic.
  3. Heat oil in a pan and sauté the vegetables along with the meat.
  4. Season with salt, pepper, and spices. Adjust the amounts to your preference.
  5. Place a portion of the prepared mixture on each crepe and roll into croquettes.
  6. Dip in crepe batter, then thoroughly coat with breadcrumbs.
  7. Fry in a pan with hot oil until the croquettes are golden brown.

After frying, place them on a paper towel to remove excess oil. Transfer to plates and drizzle with garlic sauce. Enjoy!
