I didn't fully understand the phenomenon when I first saw the massive lines at a popular crepe restaurant in Warsaw. I'm probably not the only one who always associated crepes with a simple sweet dish—jam, cottage cheese, powdered sugar, or even more caloric additions. Serving these well-known and beloved pancakes in a savory form seemed entirely unusual for me then. It took me a moment to change my approach. And to be precise, everything changed exactly after the first bite of such a culinary masterpiece.
Today, I know that crepes with a savory filling are a total hit. It's not about any trend, pretentious breaking of conventions, or hipster tendencies of the youth. These crepes are simply delicious. It's unbelievable how well they pair with ingredients I previously didn't associate with this dish. My favorite version? Chicken, spinach, mushrooms, and blue cheese. And that's exactly the crepes recipe I want to show you today!
Savory crepes with chicken and mushroom filling
Ingredients:
- 2 cups of all-purpose flour
- 1 cup of milk
- 2 eggs
- 1.5 cups of carbonated water
- 1 pinch of salt
- Oil for frying
Filling:
- 1 double chicken breast
- 1 handful of fresh spinach
- 10.5 oz of mushrooms
- 3.5 oz of blue cheese
- 1 small onion
- Salt
- Pepper
- Clarified butter for frying
Instructions:
- First, the crepes. Combine the flour and salt, then add the eggs. Gradually add the water and milk, mixing everything into a smooth batter.
- Let the prepared batter rest for 20-30 minutes to achieve the perfect consistency. This is just enough time to prepare the rest of the ingredients.
- Cut the chicken into cubes, slice the mushrooms, and finely chop the onion.
- Sauté all the ingredients in a small amount of clarified butter. Add the spinach leaves and seasonings.
- When the filling is ready, mix it with crumbled blue cheese.
- Fry the crepes, then place some prepared mixture onto each one. Roll them up, and they're ready. Enjoy your meal!
