Crepes don't have to be boring. In fact, they can make for a really tasty and nutritious lunch, not just a sweet snack that doesn't offer many nutritional benefits. How can you achieve that? It's very simple: prepare a one-of-a-kind filling!

I didn't fully understand the phenomenon when I first saw the massive lines at a popular crepe restaurant in Warsaw. I'm probably not the only one who always associated crepes with a simple sweet dish—jam, cottage cheese, powdered sugar, or even more caloric additions. Serving these well-known and beloved pancakes in a savory form seemed entirely unusual for me then. It took me a moment to change my approach. And to be precise, everything changed exactly after the first bite of such a culinary masterpiece.

Today, I know that crepes with a savory filling are a total hit. It's not about any trend, pretentious breaking of conventions, or hipster tendencies of the youth. These crepes are simply delicious. It's unbelievable how well they pair with ingredients I previously didn't associate with this dish. My favorite version? Chicken, spinach, mushrooms, and blue cheese. And that's exactly the crepes recipe I want to show you today!

Savory crepes with chicken and mushroom filling

Ingredients:

                          
  • 2 cups of all-purpose flour
  • 1 cup of milk
  • 2 eggs
  • 1.5 cups of carbonated water
  • 1 pinch of salt
  • Oil for frying

Filling:

                                  
  • 1 double chicken breast
  • 1 handful of fresh spinach
  • 10.5 oz of mushrooms
  • 3.5 oz of blue cheese
  • 1 small onion
  • Salt
  • Pepper
  • Clarified butter for frying

Instructions:

  1. First, the crepes. Combine the flour and salt, then add the eggs. Gradually add the water and milk, mixing everything into a smooth batter.
  2. Let the prepared batter rest for 20-30 minutes to achieve the perfect consistency. This is just enough time to prepare the rest of the ingredients.
  3. Cut the chicken into cubes, slice the mushrooms, and finely chop the onion.
  4. Sauté all the ingredients in a small amount of clarified butter. Add the spinach leaves and seasonings.
  5. When the filling is ready, mix it with crumbled blue cheese.
  6. Fry the crepes, then place some prepared mixture onto each one. Roll them up, and they're ready. Enjoy your meal!
