The ultimate coffee cake recipe: Moist and aromatic with apples and zucchini

The fusion of apples and zucchini may surprise you, but rest assured, this cake's flavor and soft texture will capture your heart. The zucchini lends it a tender and fluffy quality, while the apples contribute a natural sweetness. A hint of cinnamon adds complexity, and lemon icing provides the perfect finishing touch.

Ingredients:

  • 1 small zucchini,
  • 2 large apples,
  • 2 cups of cake flour,
  • 2 eggs,
  • 5 tablespoons of oil,
  • 1 tablespoon of sugar,
  • 1/2 cup of milk,
  • 1 teaspoon of cinnamon,
  • 1 package of vanilla sugar,
  • 1/2 teaspoon of baking powder.

Lemon icing (optional):

  • 3.5 oz of powdered sugar,
  • juice from 1/2 a lemon.

Preparation:

  1. Peel the zucchini and grate it using the coarse side of a grater.
  2. Peel the apples and slice them into thin semi-circles. Mix them with half the vanilla sugar and the cinnamon.
  3. Combine the flour, eggs, milk, oil, baking powder, and sugar in a large bowl.
  4. Press the zucchini to remove its juice, then fold it into the batter and apple slices. Stir well.
  5. Pour the mixture into a pan lined with parchment paper and bake for 50 minutes at 356°F.
  6. Once baked, consider drizzling the cake with lemon icing to enhance its flavor and scent.
