The secret to success in this case lies in incorporating a spinach-based mix into the gnocchi dough. This vegetable, packed with nutritional benefits, not only enhances the dish's color but also improves its taste. Gnocchi with this addition is simply even better!
Ingredients:
- 3.5 oz fresh spinach,
- 2-3 cloves of garlic,
- 1 teaspoon of salt,
- 1.5 lbs of potatoes,
- 2 cups of wheat flour,
- 2 tablespoons of potato starch.
Additions
- Melted butter,
- Grated Parmesan.
How to prepare:
Step 1. Begin by peeling and boiling the potatoes in salted water. Meanwhile, prepare a spinach mix to add a vibrant green color to the gnocchi. Blend fresh spinach leaves, peeled cloves of garlic, and salt.
Step 2. Transfer the boiled potatoes to a potato ricer, which quickly prepares the base for the gnocchi.
Step 3. Add the wheat flour and potato starch to the potatoes along with the spinach mix. Knead until the ingredients combine into a uniform and smooth dough.
Step 4. Set a pot of water on the stove and add a pinch of salt. Once the water boils, start cutting small pieces of dough with scissors and drop them into the pot.
Step 5. Cook the green gnocchi for a few minutes, then remove them from the pot using a slotted spoon.
Step 6. Drizzle the cooked gnocchi with melted butter and serve topped with grated Parmesan and finely chopped flat-leaf parsley. Enjoy your meal!
