I love desserts prepared in a few minutes without long hours in the kitchen. This is the ideal solution for days when I dislike cooking, baking, or washing dishes. The sweet finishing touch is a delicious pistachio paste with white chocolate, which can be eaten in a spoonful.

Puff pastry is a very convenient aid in the kitchen. It is easily accessible, inexpensive, and versatile, as it can be sweet and savory. It's worth having a recipe for simple puff pastry cookies in your notebook. They always turn out well and taste heavenly.
Homemade pistachio paste
The crowning glory of these cookies is delicious pistachio paste. Making it at home is not difficult, and it's more cost-effective than many store-bought options. All you need is a good blender, and you're set. It works great not only as a cookie topping but also as a sandwich spread or crepe filling.
Recipe for puff pastry cookies
These cookies are elementary to make, so even a novice can handle them. They are a big hit in my home and quickly disappear from the plates.
Ingredients:
Pistachio paste:
- 7 oz of pistachios,
- 2 blocks of white chocolate.
Other ingredients:
- 1 puff pastry,
- 3 tablespoons of sugar,
- 1 teaspoon of cinnamon,
- raspberries, blueberries.
Preparation:
Step 1. Put the pistachios in a blender and grind until a relatively smooth paste forms. Transfer to a bowl and mix with the melted chocolate.
Step 2. Unroll the puff pastry on the counter and cut it into strips. Roll each strip into a roll. It's a good idea to remove the puff pastry from the refrigerator 10 minutes earlier - when it reaches room temperature, it will be more pliable.
Step 3. Place the rolls on a baking sheet lined with parchment paper and slightly flatten them. Bake at 390°F for 15 minutes.
Step 4. Mix the sugar with the cinnamon and coat the baked cookies in it. Serve with the prepared pistachio paste or chocolate. Enjoy!
