Party pancakes with a twist: Rice noodles and tangy sauce

Pancakes are always an excellent choice for a snack. They're easy to make and can be prepared in various ways. Adding a few more substantial ingredients can even be turned into a satisfying lunch dish. Inspired by Indonesian Martabak pancakes, I'm making party pancakes with rice noodles this time. I'll be serving them with homemade sweet and sour sauce. It's sure to be a hit.

Martabak pancakes can be made with various noodles, but they taste best with thin strands. They can be wheat noodles, similar to those served with chicken soup. However, soy or rice noodles are more interesting; they give the pancakes an oriental flair, making them lighter and crunchier.

Noodle pancakes – two frying options

You can form small or large pancakes from the batter, then cut them into four parts. For smaller ones, spoon the batter onto a skillet with heated oil. For larger ones, cook them like classic crepes by spreading a slightly more significant portion of batter over the entire skillet. Martabak pancakes can also be baked in the oven—they'll be much less caloric but also less crispy.

Homemade sweet and sour sauce

I really enjoy the sweet and sour sauce. Unfortunately, store-bought versions often lack good ingredients. So, if I'm craving an authentic Asian-style feast or want to surprise friends with something special, I make a homemade version of this sauce.

On the skillet, I sauté vegetables cut into skinny strips. I add authentic pineapple pieces, tomato purée, and date syrup. Rice noodle pancakes dipped in this sauce offer an extraordinary culinary experience.

Recipe for rice noodle pancakes

If you enjoy spicier flavors, add finely chopped chili pepper to the pancake batter.

Ingredients:

  • 3.5 oz of cooked rice noodles,
  • 1 green onion,
  • 1 egg,
  • 1.8 oz of grated yellow cheese,
  • Salt and pepper to taste,
  • Oil for frying.

Instructions:

  1. Finely chop the green onion along with the chives.
  2. Mix with the egg, salt, and pepper.
  3. Add the cooked and cooled noodles. If the strands are long, you can cut them with a knife beforehand to make it easier to form smaller pancakes.
  4. Add the grated yellow cheese.
  5. Mix everything and fry in a skillet with heated oil until golden on both sides.
