Lighten up spring with easy-to-make skyr cheesecake

As spring approaches, I often choose lighter desserts. Although I'm a big fan of classic cheesecake, I now prefer the diet version. This treat has been well-received by my family, and it's easy to make in a mini version too.

It is a simple, quick, and delicious dessert.

Traditional desserts are delicious, but they're high in calories. The best examples are those popular during carnival, like donuts and fried pastries. They don't really fit into a weight-loss diet. However, that doesn't mean we can't enjoy something sweet while trying to shed extra pounds.

The dessert is low in calories

A dessert that won't ruin a reduction diet is skyr cake. This treat is often called a fit cheesecake, and it lives up to its name. You don't need fat or sugar to make it. It's made with skyr, a well-known Icelandic yogurt from cow's milk.

What are the benefits of skyr?

Skyr is rich in high-quality protein and is low in calories. This makes it a great choice for a quick snack, especially for those who are mindful of their weight. You can also use it to make desserts that taste similar to classic cheesecakes. One such dessert is skyr cake, which is incredibly easy to make. You simply mix the ingredients, making it perfect for when a sweet craving hits. It will be ready in half an hour without even needing to turn on the oven, as you can bake it in an air fryer.

Skyr cake for one serving

Ingredients:

  • 1 plain skyr yogurt (5 oz),
  • 1 egg,
  • 0.5 oz vanilla or cream pudding powder,
  • xylitol or sugar to taste (optional),
  • fruit for serving, such as blueberries.

Method of preparation:

  1. Beat the egg white until stiff.
  2. While continuing to beat on the lowest speed, add skyr and pudding. Sweeten the mixture to taste.
  3. Transfer the mixture to a small baking dish.
  4. Bake the skyr cake for 25 minutes at 340 degrees Fahrenheit.
  5. Serve with fresh fruit.
