Ingredients:

  • 0.18 oz gelatin,
  • approximately 6.76 oz of brewed coffee,
  • 7 oz high-protein yogurt, e.g., skyr,
  • 2 tablespoons of erythritol or xylitol.

How to prepare:

  1. Brew the coffee and dissolve the sweetener in it. Allow it to cool slightly, but not completely.
  2. Add the gelatin to the warm coffee and stir well to avoid any lumps.
  3. Pour the coffee into a bowl, add the yogurt, and mix vigorously with an electric mixer on high for about 10 minutes, until the mixture significantly increases in volume.
  4. Transfer the foam to cups, tall glasses, or a container.
  5. Chill in the refrigerator for at least 2 hours to set.
  6. Before serving, consider adding a sprinkle of powdered coffee, bitter cocoa, or granulated coffee for extra flavor.

If calories are not your main concern, enrich the mixture with 2-3 tablespoons of mascarpone. This addition will make the dessert creamier and more delectable, slightly increasing its calorie content but still keeping it lower than most traditional sugar-and-fat-laden desserts.
