The preparation of this special dish is very simple, and the ingredients include potatoes, flour, and herbs. To get crispy potato balls, you must remember to only drop the dough into hot oil. Otherwise, the balls will absorb the contents of the pan and become soft and soaked with oil. If you’re unsure whether the oil is hot enough, drop a small piece of dough into the pan. If it floats to the top, you can start frying. This is Mrs. Henia’s proven method.

It’s worth serving a fragrant cold sauce with these balls. This could be garlic sauce or green herb sauce, which has recently taken social media by storm. Potato balls taste great with homemade ankubens served cold or the almost iconic zucchini ketchup. You can also serve potato balls for dinner instead of potatoes or dumplings. Ingredients:

  • 4 large potatoes
  • 2 tablespoons of oil
  • 4 tablespoons of cornstarch
  • Salt, freshly ground pepper
  • Sweet paprika
  • Dried rosemary
  • Oil for frying

Preparation:

  1. Cook the potatoes and mash them.
  2. To the potatoes, add oil, cornstarch, salt, freshly ground pepper, sweet paprika, and dried thyme.
  3. Knead the mixture thoroughly with your hands. Meanwhile, start heating the oil so that the potato balls are fully submerged in it during frying.
  4. Shape the potato mixture into small balls the size of a walnut.
  5. Fry the balls in deep, well-heated oil until golden.
  6. Place the fried balls on a plate lined with a paper towel.
