There is one clever way to include them painlessly in your daily menu: Just serve them with a dressing that elevates the simplest mix of leaves.

Clinical dietitian Paulina Korol shared on social media the recipe for a green, thick dressing with skyr and pistachios. This green dressing's biggest advantage is its versatility; it can be used not only in salads but also as an addition to pasta, sandwiches, or meat.

You can modify the ingredients to your liking. If you're looking for a substitute for pistachios, try toasted almond flakes or toasted sunflower seeds. Add a few mint leaves, lemon juice, and lemon zest for a fresher flavor, which will perfectly enhance the dressing's aroma.

Green salad dressing: recipe

Ingredients:          

  • 3.5 oz of skyr
  • 0.7 oz of pistachios
  • A handful of spinach
  • 4 basil leaves
  • A tablespoon of olive oil
  • Salt and pepper to taste

Preparation:    

  1. Blend all the ingredients into a smooth dressing.
  2. Season with salt and pepper.
  3. Store in the refrigerator.
