Garlic twist makes classic potato pancakes healthier
Potato pancakes are an excellent choice for lunch, dinner, or as a snack because they are easy to make, affordable, and delicious. I enjoy them most when prepared using the classic recipe, but I occasionally modify it.
Although simple to prepare, potato pancakes require carefully chosen ingredients. The most important are the potatoes, which should be rich in starch to ensure the pancakes are crispier. All the other ingredients are just additions, and there are few in the traditional recipe. These include flour, eggs, and onion.
Not just onion for potato pancakes
Onions are often used to prepare classic potato pancakes. However, I decided to enhance the flavor by adding crushed garlic cloves. The result exceeded my expectations.
I served traditional potato pancakes with garlic sauce in the past, but not everyone in the household could tolerate yogurt. This improved version adds aromatic garlic cloves directly to the potatoes, making the pancakes tastier and healthier.
Why is it worth eating garlic?
We often rely on garlic in winter dishes because it boosts immunity. However, its list of benefits doesn't end there; consuming this vegetable year-round is beneficial. Garlic improves digestion and eases stomach discomfort. Additionally, it contains sulfur compounds that can help lower blood pressure and has antioxidants that effectively combat harmful free radicals. The best garlic is sourced from Polish crops.
Potato pancakes with garlic
Ingredients:
- about 1.3 pounds of potatoes,
- 4 or more cloves of garlic,
- 1 onion,
- 1 egg,
- 3 tablespoons of all-purpose flour,
- 1 tablespoon of potato starch,
- salt and pepper to taste,
- canola oil for frying.
Instructions:
- Peel, wash, and grate the potatoes on a medium grater, then squeeze them thoroughly.
- Add the crushed garlic, finely grated onion, egg, and flour to the grated potatoes.
- Season the mixture with salt and pepper. Mix well so that the ingredients combine thoroughly.
- Heat the oil in a pan and spoon small portions of the potato mixture.
- Fry the potato pancakes on both sides until golden brown.
- Place the fried pancakes on a plate lined with a paper towel to drain the excess oil.
You can also bake these potato pancakes in the oven. They will be more delicate and lower in calories.
