Recipe for Cousin's Emergency Cake

Ingredients:

                
  • 9 oz butter biscuits
  • 18 oz mascarpone cheese
  • 1 cup heavy cream (30%)
  • 2 packets of peach jelly
  • 2 cans of peaches in syrup
  • 2 tablespoons powdered sugar
  • Fresh raspberries or mint for garnish

Preparation:

                
  1. Dissolve the jelly in 3 1/3 cups of hot water and let it cool.
  2. Drain the peaches from syrup, cut them into cubes, and set aside a few for decoration.
  3. Whip the cream with powdered sugar until stiff, then gently mix with mascarpone cheese.
  4. Place a layer of biscuits at the bottom of a pan (about 9.5 inches). Spread half of the mascarpone cream, add the chopped peaches, and cover with another layer of biscuits.
  5. Spread the remaining cream and pour the slightly thickened jelly with peaches over it.
  6. Put the cake in the refrigerator for at least 2-3 hours until the jelly fully sets.
  7. Before serving, decorate with fresh raspberries and mint leaves.
