Cottage cheese toasts, despite their name, don't involve bread. Instead, I bake a mixture of cottage cheese, yellow cheese, and deli meat. This recipe is ideal for anyone avoiding carbohydrates and gluten, as well as those following a ketogenic diet. These crunchy sandwiches are perfect for the evening when your stomach starts to growl, but you don't want to overindulge before bedtime. It's a straightforward and quick recipe that will delight your taste buds.

Cottage cheese serves not only as an addition but also as a base for many dishes. It's great in fritters, can be used to make simple mini pizzas or tortillas, and in this dinner version, it takes the place of bread in toasts. It's a handy recipe when there's barely any bread left.

Ingredients:

                  
  • 3.5 oz of cottage cheese
  • 2 oz of grated yellow cheese
  • 3 slices of deli poultry
  • 1-2 teaspoons of red pesto (optional)
  • 2 eggs
  • 2 tablespoons of chopped chives
  • Salt and pepper to taste
  • A pinch of sweet and spicy paprika

Instructions:

          
  1. In a bowl, mix the cottage cheese, grated yellow cheese, diced deli meat, pesto, eggs, and finely chopped chives.
  2. Season with salt, pepper, and paprika to taste.
  3. Preheat a toaster or a pan.
  4. Scoop a portion of the mixture and bake until the toasts are golden brown.

Serve the warm cottage cheese toasts immediately. You can also pair them with your favorite sauce or just some ketchup. Enjoy!
