Chicken fillet upgrade: Juicy parmesan perfection recipe

Juicy chicken, sweet cherry tomatoes, and a crispy Parmesan topping create a simple yet impressive dinner. It doesn't require much preparation and looks so wonderful on the plate that you can confidently serve it on special occasions, too.

Chicken with Parmesan topping

Put the usual cutlets away; this chicken will outshine them with its flavor. An aromatic layer of sautéed sweet cherry tomatoes enriched with garlic and onion, tender and juicy chicken breast, and a crispy Parmesan crumble with parsley – a dish that even a good restaurant wouldn't be ashamed of.

Ingredients:

  • 2 chicken fillets,
  • 1 tablespoon olive oil,
  • 1 small onion,
  • 2 cloves of garlic,
  • 9 oz cherry tomatoes,
  • 1/4 cup white wine,
  • 2 tablespoons chopped fresh basil,
  • Salt and freshly ground black pepper to taste.

Parmesan topping:

  • 1/2 cup freshly grated Parmesan,
  • 1/4 cup breadcrumbs,
  • 1 tablespoon chopped fresh parsley,
  • 1 tablespoon melted butter or olive oil.

Preparation method:

  1. Lightly pound the chicken fillets and season with salt and pepper.
  2. Sauté them in an ovenproof skillet until browned, then remove them.
  3. Add the chopped onion to the same skillet and cook until softened and translucent. Add more olive oil if needed.
  4. Add minced garlic and cook for another minute, being careful not to burn it.
  5. Add halved cherry tomatoes to the skillet. Cook, stirring, until they start to release their juice and soften slightly.
  6. Pour in the white wine and cook until most of the liquid evaporates. You can skip this step if you prefer not to use wine.
  7. Add chopped basil, and season with salt and pepper.
  8. Place the chicken fillets on top of the tomato layer in the skillet.
  9. In a small bowl, mix grated Parmesan, breadcrumbs, and chopped parsley.
  10. Drizzle with melted butter or olive oil and mix to combine the ingredients.
  11. Evenly sprinkle the prepared topping over the chicken fillets.
  12. Place the skillet in an oven preheated to 400 degrees Fahrenheit and bake for about 20-25 minutes, until the chicken is fully cooked and the topping is golden and crispy.
  13. Serve the hot chicken directly from the skillet, garnished with fresh parsley or basil.

These chicken fillets taste great alongside a baguette, rice, or orzo pasta. Enjoy your meal!
