Don't forget about mushrooms

Although the wild mushroom season has started, don't forget about white mushrooms. They are a great addition to chicken. They release many juices when baking, making the meat tender and falling off the bone. White mushrooms have a fairly mild flavor, so onions will also be an excellent addition to this composition. Balsamic vinegar is used for the poultry marinade, which has many flavor properties and makes the meat tender. Adding honey is a surefire way to get a crispy skin.

How to buy the best meat?

When buying poultry, pay attention to the certificate that confirms it is free of steroids and antibiotics. It should be as fresh as possible, with a pinkish-shiny tint. Visible pieces of fat are also a good sign—they will make the chicken skin crispy. There's no need to fear fat in poultry because it is the leanest of meats.

Baked chicken with mushrooms — recipe

Ingredients:

            
  • 3 chicken thighs and 3 drumsticks
  • 3 medium-sized white onions
  • 9 ounces of white mushrooms
  • 2 tablespoons of butter
  • A sprig of fresh rosemary

For the marinade:

              
  • 4 tablespoons of balsamic vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of canola oil
  • 1 tablespoon of mustard, preferably French
  • 2 cloves of garlic
  • Salt, pepper, and paprika to taste

Method of preparation:

  1. Wash the meat and place it in a bowl.
  2. Mix the marinade ingredients thoroughly. Add the peeled and pressed garlic and salt, pepper, and paprika to taste.
  3. Pour the marinade over the meat. Cover it and place it in the refrigerator for a few hours.
  4. Transfer the chicken along with the marinade to a baking dish.
  5. Peel and slice the onions into half-rings, and place them around the meat.
  6. Clean and slice the white mushrooms into half-rings, and place them between the meat.
  7. Place pieces of butter on top of the chicken.
  8. Cover the baking dish and put it in the oven preheated to 400°F and bake for half an hour.
  9. Then, uncover, add the rosemary, and bake for another hour.
