Recipe for cauliflower and millet patties

Ingredients:

                    
  • 1 medium cauliflower
  • ½ cup of dry millet
  • 1 egg
  • 3 tablespoons of breadcrumbs (or more if the mixture is too moist)

  • ½ teaspoon of smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil for frying

  1. Rinse the millet under running water, cook in salted water until soft, and set aside to cool.
  2. Divide the cauliflower into florets, steam or boil in salted water for about 5 minutes until soft but not overcooked.
  3. Blend the cooked cauliflower into a smooth paste, add cooked millet, egg, breadcrumbs, and spices, and mix well.
  4. Shape the mixture into patties, coat in breadcrumbs, and fry in heated olive oil until golden on both sides. Serve warm with your favorite sides.
