Stew with smoked paprika
Ingredients:
- 1 large onion,
- 2 cloves of garlic,
- 2 carrots,
- 1 red bell pepper,
- 1 can of diced tomatoes,
- 1 can of chickpeas (or beans),
- 2 teaspoons of smoked paprika,
- 1 teaspoon of sweet paprika,
- 1 teaspoon of cumin,
- ½ teaspoon of hot paprika (optional),
- about 2 cups of vegetable broth,
- 2 tablespoons of olive oil,
- salt and pepper to taste,
- parsley for garnish.
Preparation:
- Finely chop the onion and garlic, and slice the carrots into thin slices. Dice the red bell pepper.
- Sauté the onion in heated olive oil, then add the garlic and fry until fragrant.
