Muffins originated in Victorian England. It might seem that the royal family indulged in them, but the truth is quite different. The first baked goods of this type consisted of leftover bread and mashed potatoes. They were very filling and satisfied hunger. Over the years, their role changed. Today, we treat them as a dessert or a small snack.

How to make muffin batter?

Muffin batter typically consists of flour, eggs, sugar, baking powder, and butter or oil. The dry ingredients need to be mixed with the wet ones, and the batter is ready. Add-ins also play an essential role. You can add fruits, nuts, vegetables, or cheese to the muffins. Although the sweet version is still most popular, savory muffins also have fans.

The secret to moist muffins

It is often said that muffins are best right after baking, and there's some truth to that since their batter dries out quite quickly. However, you can prepare them a bit differently to make them moister and stay fresh longer. One trick known from other baked goods also works in this case: adding buttermilk.

What are the properties of buttermilk?

Buttermilk is an incredibly useful ingredient in baking. Its subtle acidity makes muffins fluffier and moister. The lactic acid in buttermilk activates the baking soda, helping the batter rise evenly and beautifully.

Additionally, it intensifies the flavor, giving a slight milky taste. This type of dairy also helps the batter stay fresh longer, which is why buttermilk is perfect for muffins.
