Apple pie muffins: A delightful twist on a classic treat

Apple pie is a dessert cherished by everyone. Instead of baking a large tray of cake, I make delicious muffins. They are so tasty that no one even asks for cake anymore.

Apple pie muffins are perfect for a quick afternoon snack. They are easy to pack and take to school or work to enhance your lunch. They require minimal effort and are a worthy substitute for the apple pie loved by everyone in the family. The yogurt cake is very simple and quick to prepare and works well not only for a classic fruit cake.

Yogurt apple pie muffins

Soft and delicate yogurt-based cake, sweet apples, and an essential portion of cinnamon are the keys to sweet success. You can prepare these muffins quickly, without even using a mixer. A moment of mixing, a little patience during baking, and you can enjoy a dessert that quickly leaves only empty muffin liners behind.

The addition of yogurt makes the cake moist and delicate in taste. It is neither dry nor crumbly, making these muffins a pure pleasure to eat.

You can substitute white sugar with brown sugar, and vanilla sugar with real vanilla extract. Melted and slightly cooled butter can also replace the oil. For this recipe, it's best to use firm and sour apples, such as Ligol.

Ingredients:

                      
  • 1/2 cup natural yogurt,
  • 2 eggs
  • 1/2 cup oil,
  • 2 cups all-purpose flour,
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2/3 cup sugar,
  • 1 package vanilla sugar,
  • 2 small apples,
  • 1.5 teaspoons cinnamon.

Instructions:

                  
  1. In one bowl, combine the yogurt, oil, and eggs, and mix thoroughly.
  2. In another bowl, mix together the flour, baking powder, cinnamon, baking soda, regular sugar, and vanilla sugar.
  3. Peel the apples, remove the seeds, and cut them into small cubes.
  4. Add half of the chopped apples to the flour mixture and mix. Set the remaining portion aside.
  5. Add the wet ingredients to the bowl with the apples and gently mix until the ingredients are combined. Do not overmix.
  6. Pour the resulting batter into muffin molds.
  7. Add the remaining apples on top. You can additionally sprinkle them with a mix of cinnamon and sugar.
  8. Place in an oven preheated to 350 degrees Fahrenheit and bake for 20 minutes, until a toothpick comes out clean.

Decorate the finished muffins with icing or sprinkle with powdered sugar. Enjoy!
