Black carrots, or purple carrots, are uncommon in our region. However, they are far from new and originate from Asia, where they have been cultivated since ancient times. These carrots made their way to Europe as early as the 13th century and were grown for several centuries. Eventually, they were replaced by the orange variety developed in the Netherlands. Orange carrots quickly gained more popularity and remain more common to this day.
What distinguishes black carrots
Black carrots stand out not only for their intense color but also for their rich nutritional value. They contain valuable antioxidants and vitamins A, C, E, K, and the B-complex. Additionally, they have plenty of minerals, including potassium, calcium, phosphorus, magnesium, iron, and selenium. All these components strengthen the immune, nervous, and cardiovascular systems. Black carrots may also help lower levels of bad cholesterol and blood pressure.
Helpful for weight loss
This vegetable can also aid in weight loss. Not only is it high in fiber, which speeds up digestion and supports metabolism, but it is also low in calories and helps regulate glucose levels. It's ideal for salads, but it can also be baked or fried.
Not only orange and black
While the orange carrot is the most well-known, there are several types of this vegetable. Besides black, there is also red, characterized by its lycopene content, an antioxidant known primarily from tomatoes. Lycopene has anti-inflammatory effects and also strengthens the immune system. However, in comparison to red and orange carrots, black carrots have more nutrients. This is why they are often categorized as superfoods.
