Apricot peanut puff pastry rolls: The sweet treat you need
Quick puff pastry rolls are a delicious sweet snack recipe. They are perfect for afternoon tea or a second breakfast at work. Even French patisseries will have a hard time competing.
Puff pastry often makes it to my shopping list. It's an excellent base for many sweet and savory snacks. In this recipe, it becomes the base for delicious rolls with apricots. A simple and tasty peanut filling is hidden between the flaky, crispy pastry.
Apricot rolls with peanut filling
Although it might seem that everything about puff pastry has been said, you can still surprise everyone with a new recipe. One of my go-to quick desserts is simple rolls, where a fruity addition of apricot jam balances the sweet taste of the pastry and filling.
When they appear on the table, they better not blink – they disappear in the blink of an eye. Kids love them, and adults can't resist. They're perfect for a sweet treat.
Ingredients:
- 1 puff pastry sheet
- 6 teaspoons of apricot jam
- 1 egg
- almond flakes
- apricots
Peanut Filling:
- 9 oz salted peanuts
- 3 fl. oz milk
- 0.7 oz powdered sugar
Directions:
Step 1. Grind the salted peanuts in a food processor and transfer them to a bowl. Add milk and powdered sugar and mix thoroughly.
Step 2. Unroll the puff pastry sheet on a counter and spread the prepared peanut mixture.
Step 3. Fold the puff pastry in half and cut into long strips. Twist each strip around its own axis and then coil into a spiral.
Step 4. Place the rolls on a baking sheet lined with parchment paper. Use a spoon to make an indentation in the center, which you fill with apricot jam. Brush the edges of the pastry with beaten egg and sprinkle with almond flakes. Place in an oven preheated to 400°F and bake for 15 minutes.
Step 5. Transfer the ready rolls to a plate, adding pieces of fresh apricots. You can also decorate them with a mint leaf or sprinkle them with powdered sugar. Enjoy!
