Pistachio rolls with pudding and raspberries
Some call them rolls; others say croissant wheels. They're really just another form of popular croissants. The filling is hidden in a round pastry coated with chocolate. It's a sweet indulgence that cannot be resisted.
The crispy, golden "croissant wheel" has won the hearts of gourmets worldwide, particularly in New York. Their debut at Lafayette Grand Café & Bakery caused a real sensation, and the lines for these crispy wheels with filling seemed endless. Today, you can easily prepare them in your kitchen.
Ingredients:
- 2 sheets of puff pastry
- 11 oz vanilla pudding
- 2 oz pistachio cream
- 7 oz raspberries
- Chopped pistachios
- 7 oz milk chocolate
Preparation:
Step 1: Unroll the puff pastry on the counter and cut it into long strips.
Step 2: Combine the strips, making one long strip from each sheet. Wrap them into a spiral and place them on a baking sheet lined with parchment paper. Use a round cutter on the dough to retain the shape of the pastry. Bake in an oven preheated to 400°F for about 20 minutes.
Step 3: Transfer the vanilla pudding to a bowl. Add pistachio cream or paste, mix thoroughly, and transfer to a piping bag. Use a knife to score the baked and cooled rolls, then fill them with the prepared mixture.
Step 4: Melt the chocolate in a water bath and dip part of the filled roll in it.
Step 5: Crush the raspberries and drizzle them over the prepared rolls. Enjoy!
