Buckwheat pancakes are a tried-and-tested recipe for an economical and nutritious meal. With just a few simple ingredients, which are likely already in your pantry, you can enjoy them with sauces, as a side to roasted meats, or as a quick snack.

Simple buckwheat pancakes

Though buckwheat is a nutritional powerhouse, its taste isn't universally loved. These pancakes are a straightforward way to incorporate buckwheat into your daily diet. Buckwheat is an excellent source of complete plant-based protein, and its fiber aids digestion improves intestinal peristalsis and supports a healthy weight. It's also rich in B vitamins, magnesium, phosphorus, and iron.

When combined with a few simple ingredients, buckwheat makes delicious, nutritious, savory pancakes that everyone in the family, from adults to kids, will enjoy.

Adding Parmesan cheese beautifully enhances the flavor, adding a salty umami note. They pair wonderfully with mushroom sauce, tomato sauce, or topped with green onions.

Ingredients:

  • 3.5 oz of buckwheat
  • 5 tablespoons of grated Parmesan cheese
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Cook the buckwheat in salted water until fluffy, approximately 15 minutes after the water boils.
  2. Drain the buckwheat, transfer it to a bowl, and let it cool.
  3. Add the eggs and grated Parmesan and season with salt and pepper.
  4. Mix thoroughly until the ingredients are well combined.
  5. Heat oil in a pan and scoop portions of the mixture into it.
  6. Fry on both sides until the pancakes are golden brown.

After frying, place the pancakes on a paper towel to absorb excess oil. Serve with your favorite accompaniments. They make a fantastic addition to lunch, dinner, or a quick lunch for work. Enjoy!
