Although these cheesecakes are quick to prepare, they need adequate cooling time. Start preparing them the day before the planned occasion.
Ingredients:
- 9 oz low-fat cottage cheese,
- 1 sugar-free strawberry jelly,
- 5 oz strawberries,
- 9 mini sponge cakes,
- heart-shaped marshmallows for decoration.
Instructions:
Step 1. Dissolve half of the jelly in 0.8 cups of hot water and set it aside to cool.
Step 2. Remove the stems from the strawberries and cut them into cubes. Transfer them to dessert cups, pour the jelly over, and place the cups in the fridge for 3 hours to set.
Step 3. Dissolve the remaining jelly in 0.8 cups of hot water. Once it has cooled, add the crumbled cottage cheese and blend into a smooth mixture.
Step 4. Add the sponge cakes to the dessert cups. Spread the prepared cottage cheese mixture over them and refrigerate overnight. The next day, decorate with marshmallow hearts and strawberries. Enjoy!
