Ingredients:

  • 3.5 oz. muscovado sugar
  • 2.11 oz. dark cocoa
  • 1.05 cups of boiling water
  • 4.59 oz. of soft butter
  • 2 tablespoons of vanilla extract
  • 5.64 oz. of sugar
  • 7.76 oz. of cake flour
  • 1.5 teaspoons of baking powder.

For frosting:

  • 1.06 oz. of sugar,
  • 6.35 oz. of butter,
  • 0.53 cups of water,
  • 12.70 oz. of bitter chocolate.

Method of preparation:

  1. Mix the muscovado sugar, cocoa, and boiling water in a large bowl. Ensure you whisk it well to produce a smooth mixture.
  2. In a separate bowl, cream the butter and sugar together until fluffy.
  3. Add flour, eggs, and the earlier cocoa-sugar mixture to the fluffy base. Stir in the vanilla extract and blend it well.
  4. Divide the batter into two greased 7.87-inch cake pans.
  5. Bake the cakes at 356 degrees Fahrenheit for about 20 minutes.
  6. Combine the muscovado sugar, butter, and water for the frosting in a saucepan over low heat. Stir until the mixture is even in texture.
  7. Break the chocolate into pieces and place in a bowl. Pour the hot mix from the saucepan over the chocolate, ensuring it melts entirely.
  8. Whip the resultant mixture using a mixer when it cools down slightly.
  9. Leave the frosting to thicken for about an hour, remembering to stir it a couple of times in between.
  10. Spread a layer of the chocolate frosting on the cooled cake with a spatula.
  11. Place the second layer of cake on top and spread the remaining frosting.

If desired, you could additionally embellish the cake with fresh fruit such as strawberries or raspberries. Either would pair beautifully with the flavors of this cake. Bon Appetit!
