In summer, gardens overflow with vegetable and fruit wonders, and one of the stars is zucchini, a versatile vegetable in the kitchen. Although it's mainly associated with pancakes, you will love this recipe even more.

You can find zucchini in stores almost year round, but it is harvested during summer. It grows abundantly and is easy to cultivate, resulting in impressive specimens from garden visits. Zucchini's quite neutral taste makes it a great base for culinary discoveries and experiments. It's perfect for dinner pancakes, as an addition to oatmeal, a salad ingredient, homemade ketchup, or delicious rings.

Crispy zucchini rings

Pancakes are great, but have you tried crispy rings? They sound unusual, but they are one of the tastiest ways to serve zucchini. They are simple to prepare, impressive, and, most importantly, delicious.

Baked zucchini rings are an excellent snack for lovers of healthy, light meals and tasty snacks. They are made in the oven, so we avoid adding fat and, thus, more calories. They are perfect for dinner, and when placed on a party table, they will disappear faster than popcorn and chips. The secret of the delicious breading is parmesan, which melts in the oven and covers the zucchini with a crispy, salty crust.

Ingredients:

  • 1 large zucchini
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • Olive oil
  • Favorite herbs (e.g., basil, oregano, thyme)
  • A pinch of hot paprika

Preparation:

  1. Wash the zucchini thoroughly and cut it into rings about 1/2 inch thick.
  2. Sprinkle the rings with salt and pepper and set them aside for 15 minutes to release water.
  3. Prepare three bowls: beat the egg in one, mix the flour with spices in the second, and combine the Parmesan cheese with breadcrumbs in the third.
  4. Coat each zucchini ring first in the flour, then in the egg, and finally in the Parmesan and breadcrumb mixture.
  5. Line a baking tray with parchment paper and drizzle with olive oil.
  6. Arrange the breaded zucchini rings on the tray.
  7. Bake in an oven preheated to 400°F for about 20-25 minutes until golden brown and crispy.

Serve with your favorite dip, such as tzatziki, guacamole, or garlic sauce. You can also add them to a salad for a crunchy touch or serve them as a side dish to grilled meats. Enjoy!
