Perfect pork chops? Crispy, delicate, and juicy. Although the recipe is simple, the chops don't always turn out how we want. Sometimes, after frying, the meat is dry and rubbery. This can be avoided. Just soak them in the marinade an hour before frying, and the chops will be as good as the ones our grandmothers served us.
How to prepare perfect pork chops?
Preparation is incredibly simple: Get high-quality pork loin, cut it into thin slices, pound it, soak it in breading, and fry it.
The key aspect is the proper preparation of the meat. Before frying, it should be thinly pounded and soaked in milk with onions to soften it a bit. Our grandmothers used this trick, but there is an even better way.
Just replace the milk with kefir or natural yogurt. The live bacterial cultures they contain (including lactic acid) will make the chops tender and delicate. This marinade also works for turkey or chicken.
Juicy pork chops — recipe
Ingredients:
- 1.1 lbs pork loin,
- 2 cups natural yogurt or kefir,
- 2 garlic cloves,
- 1 small onion,
- salt,
- pepper,
- 2 eggs,
- bread crumbs,
- lard or oil for frying.
Start by preparing the pork loin. Cut it into thin slices and pound them so their thickness does not exceed 0.4 inches. Put the chops in a bowl and pour yogurt or kefir over them. Add pressed garlic and sliced onions. Place the bowl in the refrigerator.
After an hour, remove the meat and discard the excess marinade. Season with pepper and salt on both sides. Dip in beaten eggs, then coat in bread crumbs. Fry the chops in hot oil or lard for 3-4 minutes on each side.
