These homemade noodles are a classic staple in Polish cuisine. The usual method involves mixing all the ingredients in a bowl and dropping spoonfuls of the mixture into boiling water. However, my grandmother had a unique twist on this process. She would pour the mixture into a bag and cut off the tip, allowing the noodles to cook even faster. Smaller holes result in finer noodles, while larger cut-offs produce thicker ones. This nifty trick is a lifesaver, especially when a quick meal preparation is needed.

A quick homemade noodle recipe

As with any recipe, you'll want to start by gathering all the necessary ingredients. In this case, you only need three items:

  • 2 eggs,
  • salt,
  • 8 flat tablespoons of flour.

  1. Break the eggs into a bowl or container. Add the flour and salt. Blend everything with a blender or mixer. Allow the mixture to rest for fifteen minutes.
  2. Bring salted water to a boil in a large pot.
  3. Transfer the noodle mixture into a special cone-shaped bag (similar to those used for icing cakes or applying creams). Snip off a portion of the cone. If you prefer thicker noodles, make a slightly larger hole in the bag.
  4. Slowly pour the mixture into the boiling water. Allow the noodles to cook for about two minutes, stirring 2–3 times.
  5. Once the noodles are ready, use a slotted spoon to remove them and rinse with cold water. Alternatively, you can drain the noodles in a colander and then rinse them with cold water.

These homemade noodles are the perfect addition to chicken soup. You can bypass the boiling and straining process by directly pouring the noodle mixture into your boiling chicken soup, making for a quick and mouthwatering dish.
