Express cakes are what we love the most. Although in an ideal world, we would always have enough time to spend long hours in the kitchen carefully paging through recipes, selecting ingredients, mixing, baking, and decorating the most elaborate cakes, in real life, you know how it is. That's when this unpretentious yogurt cake comes to the rescue.

Its preparation is ridiculously easy, and once you take your first bite, you'll understand what we meant by out-of-this-world softness. It's literally like taking a trip to the skies for dessert and tasting a fluffy cloud straight out of a children's fairy tale. Far-fetched comparison? You'll change your mind once you finish making this yogurt cake. You'll really feel like you're in heaven!

Here is the recipe. Simple, right? Be sure to let us know your thoughts!

The most delicate yogurt cake

Ingredients:

  • 2 cups of all-purpose flour
  • 1 cup of sugar
  • 10.5 oz cottage cheese
  • 5 oz plain yogurt
  • 4 oz vegetable oil
  • 5 eggs
  • 4 tablespoons confectioners' sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • A pinch of salt

Preparation:

The cake owes its fluffiness, among other things, to natural yogurt.

  1. Beat four eggs with sugar and a pinch of salt until you get a fluffy mixture. Pour in the plain yogurt carefully, stirring constantly.
  2. Add the vegetable oil to the mixture, followed by the flour, baking powder, and baking soda. Mix well. Pour into a cake pan lined with parchment paper.
  3. Place the cottage cheese in a container and mash it with a fork. Add one egg and confectioners' sugar and blend into a smooth mixture. Pour this over the cake in the pan and smooth it gently.
  4. Place in an oven preheated to 350°F and bake for about 45 minutes. Then cool and sprinkle with confectioners' sugar. Enjoy!
