If you choose fresh tomatoes, parboil and peel them.

Recipe for Marcella Hazan's tomato sauce

Ingredients:

  • 1 onion
  • 2 tablespoons of butter
  • 14 ounces of parboiled and peeled tomatoes

Instructions:

  2. Once it's soft and fragrant, add the parboiled and peeled tomatoes—fresh or canned.
  3. Cover with a lid and cook over low heat for about 45 minutes, stirring the sauce occasionally with a wooden spoon.
