To be completely honest, we've prepared many cream soups over the years, ranging from pumpkin, broccoli, cauliflower, and tomato to zucchini. However, we have not explored a version with leek. The spark of inspiration ignited while drafting an article discussing the remarkable benefits of leek. Realizing how beneficial this vegetable is to human health, we concluded it wasn't something to pass up. Hence, the idea of leek cream soup was conceived. The next move was, of course, to bring the concept to life.
Preparing this soup, as you might presume, is far from complicated. It merely requires a dash of patience and a good, aromatic broth prepared beforehand. Below, you'll find the leek cream soup recipe. Best of luck!
Leek Cream Soup Recipe
Ingredients:
- 1 quart of broth,
- 1 leek,
- 2 onions,
- 3 potatoes,
- Parsley,
- Salt, pepper,
- Oil for frying.
Instructions:
- Peel and chop the onions, frying them in oil until they're transparent. Add the thoroughly cleaned and halved leek. Let it fry for a few minutes on low heat.
- Move the sautéed vegetables into a pot, and pour the broth over them. Cook the mixture until the leek softens. At this point, you can blend the soup until it's reasonably smooth. Season with salt and pepper, and garnish with parsley.
