This refers to the traditional preparation method of blending garlic, cheese, herbs, and olive oil in stone mortars. This paste was historically consumed with breadcakes, marking the genesis of pesto.

Over time, nuts were incorporated into pesto, and eventually, basil became the star ingredient in what is now known as pesto alla Genovese. While basil is often deemed indispensable for this culinary delight, wild garlic is a stellar, albeit less conventional, choice.

While wild garlic pesto is best enjoyed fresh, it can be stored in the refrigerator for 2-3 weeks, ideally in jars covered with a layer of oil to preserve its freshness.
