Why is frozen cauliflower the better choice?
The key is in the timing of when the vegetable is frozen. Although cauliflower can keep in the fridge at a temperature of 32 degrees Fahrenheit for up to 5 weeks, it's advisable not to wait too long. Freshly picked, ripe vegetables contain the most vitamins and minerals, and these diminish over time. By freezing cauliflower when it's at its "peak condition," you preserve its most valuable nutrients.
How to freeze cauliflower so it doesn’t turn gray
Raw cauliflower can develop an unappetizing grayish color when frozen. Blanching can prevent this. This quick thermal treatment ensures the florets retain their white color and maintain their nutritional properties.
Immerse the divided cauliflower into boiling water for 2 minutes. Remove it with a strainer and rinse with cold water. Then spread the vegetable on a tray and dry it with a paper towel. Place the tray in the freezer for about 30 minutes. Once the cauliflower is frozen solid, transfer it to appropriate containers or zip-lock bags.
What to look for when buying frozen cauliflower
It's time to stock up. When choosing from the supermarket's selection of frozen vegetables, prioritize those without additives and look for packaging that says: 100% cauliflower. If the package is transparent, check to ensure the florets have a natural color without brown spots.
Additionally, verify the expiration date and opt for products with a distant expiration. Ensure the packaging is tightly sealed, and the cauliflower is not partially thawed.
Frozen cauliflower in the kitchen
High-quality frozen vegetables can make meal preparation much easier. You can toss cauliflower florets into boiling water right from the freezer. For traditional cauliflower with breadcrumbs, cook it for 5 minutes, drain, and then sauté in a skillet.
You can also place still-frozen vegetables in the oven. After 35 minutes at a temperature of 340 degrees Fahrenheit, they'll come out perfectly roasted. Roasted cauliflower makes a great side dish or snack, especially paired with a nut sauce.
