Ingredients:
- 2.2 pounds of cottage cheese from a tub,
- 3.5 ounces of biscuits,
- 3 tablespoons of powdered sugar,
- 2 lemon jellies,
- 6.8 fluid ounces of 36% cream,
- 3 tablespoons of sugar,
- 2 tablespoons of butter,
- 3.5 ounces of coconut flakes.
Preparation:
- Dissolve the jellies in 2.1 cups of hot water, stirring thoroughly, then wait for them to cool down.
- Line an 8.7-inch x 9.8-inch mould with parchment paper, arranging a layer of biscuits on it.
- In a bowl, whip the cream adding the powdered sugar, continue mixing until you get a thick texture.
- Add the tub of cottage cheese, mix again until the cream becomes velvety.
- Pour in the setting jelly, stir gently, then spread the mixture on the biscuit layer.
- In a pan, melt the butter and pour in the coconut flakes and sugar. Gently fry until golden.
- Sprinkle the top of the cake with the created mixture and refrigerate overnight.
- The following day, serve the prepared cake.
Alternative ways to serve the cake:
- Add your favourite fruit to the cake, such as strawberries, raspberries, or blueberries.
- A touch of cocoa can be added to the cake for a darker hue and a more intense flavor.
- If you prefer a sweeter cake, add more sugar.
