Ingredients:

  • 0.61 lb of puff pastry,
  • 0.40 lb of green pesto,
  • 0.44 lb of feta,
  • 0.22 lb of cherry tomatoes,
  • 0.04 lb of crushed pistachios,
  • 1 egg for brushing.

Instructions:

Step 1. Spread out a sheet of puff pastry on your kitchen countertop, then spread the green pesto onto it.

A kitchen spatula or a pastry scraper is ideal for this step. Choose what suits you best. The crucial thing is to achieve a uniformly thin layer spread over the entire pastry.

Step 2. Next, crumble the feta and sprinkle it across the pastry. Then add the cherry tomatoes, which should be rinsed and dried beforehand. Lastly, quarter the tomatoes and scatter them onto the puff pastry.

Step 3. Start by rolling the prepared pastry with the toppings into a tight roll. Delicately score the roll in several places along its entire length. Then place the tip of a wooden spoon between the resulting cuts and lightly press it against the countertop. This step creates small indentations on the pastry, giving the whole thing a fancy touch.

Step 4. Lastly, connect the ends of the roll, thus forming a pastry ring. Transfer it into a baking mold and brush the pastry with a beaten egg. This step gives the pastry a lustrous, gold hue after baking.

Step 5. Decorate the pastry disk with pistachios. Then, bake the pastry in the oven for 20 minutes at a temperature of 374 degrees Fahrenheit.

Step 6. Serve the finished pastry disk on a large plate. Garnishing with a sprig of cherry tomatoes in the middle adds a nice touch. Enjoy your meal!
