Why is pasteurization important?

The purpose of pasteurization is to eliminate any bacteria and fungi that may be present in prepared products. Pasteurization in the dishwasher

Then we set a dishwasher program that provides a temperature of about 158-167 degrees Fahrenheit. And that's all. When the cycle finishes, we simply carefully remove the ready preserves, which will safely overwinter in the pantry.
