How to Prepare Homemade Curry Soup with Shrimp?
Ingredients:
- 8.8 oz of shrimp,
- 1.05 quarts of homemade vegetable broth,
- 2 potatoes,
- 1 red pepper,
- 1 carrot,
- 12.3 oz of canned tomatoes,
- 0.6 inch of fresh ginger,
- 1 onion,
- 2 cloves of garlic, with spices including: cinnamon, salt, pepper, curry, smoked paprika, and turmeric,
- fresh parsley,
- 2 tablespoons of olive oil.
Method of Preparation:
- Initiate the recipe by preparing the shrimp. Clean them first, then season as per your preference with salt, pepper, and paprika.
- Place a pot on the stove to cook the soup. Heat it with olive oil. Add the peeled and finely chopped onion and the peeled and pressed garlic cloves to the pot.
- After some time, incorporate the peeled and grated ginger, cinnamon, curry, and turmeric.
- Add the previously prepared shrimp to the pot once the ingredients have become golden.
- In the meantime, peel and cut the potatoes, carrot, and red pepper into smaller pieces. Then, you can add them to the pot, along with the canned tomatoes.
- Lastly, pour the homemade vegetable broth into the pot and simmer for around 25 minutes.
