It’s hard to imagine birthdays, name days, or other family gatherings without a delicious cake. Typically, these consist of multiple sponge cake layers separated by various creams, topped with traditional chocolate glaze. There’s nothing wrong with such a cake, but sometimes it’s worth going a bit wild and opting for a completely different solution.

Everyone was speechless and amazed when I made this for the first time. Since then, they don’t even want to hear about any other cake.

Ingredients:

Waffle batter (about 8 pieces): 

                
  • 10.5 oz of wheat flour
  • 1.5 teaspoons of baking powder
  • 4 tablespoons of sugar
  • 1 packet of vanilla sugar
  • 1.7 cups of milk
  • 2 eggs
  • 1/2 cup of vegetable oil

Strawberry Cream: 

          
  • 2.1 cups of 30% heavy cream
  • 12.3 oz of mascarpone
  • 2 tablespoons of powdered sugar
  • 10.6 oz of chopped strawberries

Decoration: 

        
  • 1.7 oz of 30% heavy cream
  • Strawberries
  • A mint leaf for decoration

preparation method

Step 1. Prepare the waffle batter by combining the flour, milk, eggs, sugar, vanilla sugar, baking powder, and oil.

Step 2. Pour the batter into a preheated waffle iron and bake until the waffles are golden brown.

Step 3. Prepare the strawberry cream. First, whip the well-chilled cream with powdered sugar. After a moment, add the mascarpone and fold in the washed and chopped strawberries.

Step 4. Place four waffles on a plate to form a large square. Use a round cutter to cut out a perfect circle, creating the cake base.

Step 5. Without removing the cutter, spread the strawberry cream directly on the waffle base. Cover the cream with another layer of crispy waffles.

Step 6. Decorate the cake using whipped cream, fresh strawberries, and mint leaves.

Step 7. Refrigerate the finished cake for 2 hours, then cut it into smaller pieces and serve to guests. Enjoy!
